Stupid question of the day: Why are baby carrots so wet?

I get bags of baby carrots to munch on at work, and they come out of the bag not just damp, but soaking wet. I usually dump them out of the bag onto a bunch of paper towels to absorb all the water, then I can re-bag them in a ziploc and they last a lot longer without getting slimy. They also absorb salad dressing better when they're not soaking wet.

As it turns out, the internet holds the great oracle of knowledge: tap water is injected to keep the carrots moist and fresh longer, and as long as the carrots are kept between 35-45F, they should stay fine.
