Today I am eating mashed potatoes with a fork. Kind of a rare treat actually, but allowed in my limited foodcabulary-- they're instant, though actually pretty good; a major step up from the generic boxed potato flakes of my youth.

And potatoes? One of the "stay away" foods with diabetes because of the high carb count. Getting to have potatoes is a righteous yum.

I don't have a lot, maybe half a cup at a shot. And I have to eat them slowly-- it will probably take me 30-45 minutes to eat that much.

But potatoes!
