The fat-free cottage cheese is rapidly becoming my bestest friend. There's enough flavor and texture that it's satisfying with a large amount of protein and it is easily digestible. And 80 calories per half-cup-- it's a bit more than fat-free yogurt, but it's a good flavor/texture change.
I also tried the fat-free Ricotta. It was absolutely indistinguishable from mashed potatoes, but with less flavor. I ended up giving it to the dog, who didn't eat it.
And I made a mash of onions, roast beef AuJus, parmesan cheese, and balsamic vinegar, with a little garlic and basil added, then reduced it down to a mooshy paste. It would be about perfect for taco meat. I still have to be careful, as even blended down, it's still reactive with my tummy, but small amounts-- like half a teaspoon-- are fine.
And today marks 50 lbs. loss since the surgery. 76 days ago.
I'm not miserable. I am different.
